Skillet Beef Alfredo Tortellini

Ingredients:

1 lb ground beef
1 tablespoon olive oil
2 cloves garlic, minced
1 (16 oz) package cheese tortellini (fresh or frozen)
1 cup heavy cream
1/2 cup beef broth
1 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon butter
Fresh parsley, chopped (for garnish)

Directions:

Heat the olive oil in a large skillet over medium heat. Add the ground beef and season with salt, pepper, and garlic powder. Cook for about 6-8 minutes, breaking up the meat with a spoon as it cooks, until it’s browned and cooked through. Once the beef is done, remove it from the skillet and set it aside.
In the same skillet, melt the butter and sauté the minced garlic for about 1 minute until it becomes fragrant. Pour in the heavy cream and beef broth, stirring to combine. Let the sauce simmer for about 3-4 minutes until it begins to thicken slightly.
Add in the Parmesan and mozzarella cheese, stirring until they melt and the sauce becomes creamy and smooth. If the sauce is too thick, you can add a splash of beef broth or some reserved pasta water to adjust the consistency.
Meanwhile, cook the tortellini according to package instructions and drain, saving a bit of the pasta water.
Once the sauce is ready, add the cooked tortellini and beef back into the skillet. Gently toss everything together to coat the tortellini and beef in the creamy Alfredo sauce. Let it cook for another 2-3 minutes to heat everything through and ensure the pasta is coated.
Garnish with freshly chopped parsley and serve immediately.
