🥩 Garlic Butter Ribeye with Roasted Potatoes & Green Beans

📝 Ingredients
For the Ribeye:
2 ribeye steaks (1 inch thick)
1 tbsp olive oil
Salt & black pepper
1 tsp garlic powder
1 tsp smoked paprika
Garlic Herb Butter:
4 tbsp softened unsalted butter
1 tsp garlic (minced)
1 tsp chopped parsley
Pinch of salt
Roasted Potatoes:
3–4 Yukon gold or red potatoes, cubed
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt & pepper to taste
Green Beans:
2 cups fresh green beans
1 tbsp butter
Salt & pepper
Optional: a squeeze of lemon juice or a pinch of garlic powder
👩🏽🍳 Instructions
Step 1: Make Garlic Butter
Mix butter, garlic, parsley, and salt in a bowl.
Chill in fridge while you prep the rest.
Step 2: Roast Potatoes
Preheat oven to 425°F (220°C).
Toss potatoes with oil and seasonings.
Roast for 25–30 mins, flipping halfway, until golden and crispy.
Step 3: Sear the Ribeye
Pat steaks dry, rub with olive oil and season with salt, pepper, garlic powder, and paprika.
Heat a skillet on high. Sear steaks 3–4 mins per side (medium rare), or until desired doneness.
Rest 5 mins and top with a scoop of garlic herb butter to melt.
Step 4: Sauté Green Beans
Steam or boil green beans for 2–3 mins.
Sauté in butter over medium heat for 4–5 mins. Season and serve.
