📝 Ingredients:
For the crust:
1 cup graham cracker crumbs
2 tbsp sugar
1/4 cup unsalted butter, melted
For the cheesecake filling:
8 oz cream cheese, softened
1/4 cup powdered sugar
1/2 cup sour cream
1 tsp vanilla extract
1/2 cup heavy cream
For the strawberry topping:
1 cup fresh strawberries, chopped
2 tbsp sugar
1 tsp lemon juice
For the crunch coating:
1 cup cornflakes, crushed
2 tbsp sugar
1 tbsp melted butter
🍽 Instructions:
Preheat oven to 350°F (175°C). Line a mini muffin tin with paper liners.
Make the crust: Combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the muffin tin to form a crust. Bake for 8-10 minutes and let cool.
Prepare the cheesecake filling: Beat together cream cheese, powdered sugar, sour cream, and vanilla until smooth. In a separate bowl, whip heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
Make the strawberry topping: Mix chopped strawberries, sugar, and lemon juice in a small bowl. Let sit for 10 minutes to release the juices.
Prepare the crunch coating: In a bowl, mix crushed cornflakes, sugar, and melted butter.
Assemble the bites: Spoon a dollop of cheesecake filling over the cooled crust in the muffin tin. Top with a spoonful of strawberry topping. Sprinkle with the cornflake crunch mixture.
Chill in the fridge for at least 2 hours before serving.
