Creamy Cajun Chicken Shrimp Pasta with Garlic Sauce
Ingredients:
8 oz rotini pasta (or any short pasta of choice)
1 lb shrimp, peeled and deveined
1 lb chicken breast, diced
2 tbsp Cajun seasoning
1 tbsp olive oil
2 tbsp unsalted butter
3 cloves garlic, minced
1 cup heavy cream
1 cup milk
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
1 tsp smoked paprika
1/2 tsp red pepper flakes (optional, for extra spice)
1/2 tsp salt (adjust to taste)
Fresh parsley, chopped (for garnish)
Directions:
Cook pasta according to package directions until al dente. Drain and set aside.
Toss chicken and shrimp with Cajun seasoning until fully coated.
In a large skillet, heat olive oil over medium heat. Add the seasoned chicken and cook for about 5-6 minutes until fully cooked. Remove and set aside.
In the same skillet, add shrimp and cook for 2-3 minutes per side or until pink and opaque. Remove and set aside.
Add butter and garlic to the skillet. Sauté for 1-2 minutes until fragrant.
Pour in heavy cream and milk. Stir well and bring to a gentle simmer.
Add Parmesan, cheddar, smoked paprika, red pepper flakes, and salt. Stir until the cheese melts and sauce thickens slightly.
Return cooked pasta, chicken, and shrimp to the skillet. Toss everything together until coated in the creamy garlic sauce.
Let simmer for another 1-2 minutes, then remove from heat.
Garnish with fresh chopped parsley and serve hot.
