🍋 Lemon Cheesecake Squares

Ingredients:
Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
Cheesecake Layer:
2 packages (8 oz each) cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 tbsp all-purpose flour
1/4 cup lemon juice
1 tbsp lemon zest
Topping (optional):
Powdered sugar or whipped cream

- Instructions:
1️⃣ Preheat & Prepare Pan:
Preheat oven to 325°F (165°C).
Line an 8x8-inch baking dish with parchment paper or grease lightly.
2️⃣ Make the Crust:
In a bowl, combine graham cracker crumbs, sugar, and melted butter.
Press evenly into the bottom of the pan.
Bake for 8–10 minutes, then set aside to cool slightly.
3️⃣ Make the Cheesecake Layer:
In a large bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing well.
Stir in vanilla, flour, lemon juice, and lemon zest.
4️⃣ Bake:
Pour the cheesecake mixture over the crust and smooth the top.
Bake for 30–35 minutes, or until the center is set.
Cool completely, then refrigerate for at least 3 hours or overnight.
5️⃣ Serve:
Cut into squares and dust with powdered sugar or top with whipped cream if desired.
