Garlic Butter Steak and Potatoes Recipe

Ingredients:

1 1/2 pounds sirloin steak, cut into bite-sized pieces
1 1/2 pounds baby potatoes, halved
4 tablespoons olive oil, divided
6 cloves garlic, minced
4 tablespoons unsalted butter, divided
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried oregano
Salt and pepper, to taste
Fresh parsley, chopped for garnish
Directions:

Preheat the oven to 400°F (200°C).
Toss the baby potatoes in a bowl with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
Roast the potatoes for 20-25 minutes until tender.
Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the steak and cook for 3-4 minutes, until browned. Set the steak aside.
In the same skillet, add garlic and cook for 1 minute until fragrant.
Reduce heat, add 2 tablespoons of butter, and stir to combine with the garlic.
Return the steak to the skillet and toss with thyme, rosemary, and oregano.
Add the roasted potatoes to the skillet and stir to combine.
Roast in the oven for an additional 10-15 minutes until fully cooked.
Stir in the remaining butter and garnish with fresh parsley.
