Roasted Parmesan Creamed Onions

Ingredients:

2 pounds small pearl onions, peeled
2 tablespoons olive oil
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 tablespoon fresh thyme, chopped
Salt and pepper to taste
1 tablespoon fresh parsley, chopped
Directions:

Preheat the oven to 400°F (200°C).
Place the peeled onions on a baking sheet and drizzle with olive oil. Toss to coat evenly.
Roast the onions in the preheated oven for 25-30 minutes, or until they are tender and slightly golden.
While the onions are roasting, heat the heavy cream in a small saucepan over medium heat. Stir in the Parmesan cheese and cook until the cheese has melted and the mixture is smooth.
Remove the onions from the oven and transfer them to a serving dish. Pour the creamy Parmesan sauce over the onions.
Sprinkle breadcrumbs over the top and return the dish to the oven for an additional 10-15 minutes, or until the breadcrumbs are golden and crispy.
Garnish with fresh thyme and parsley, then serve.
