These make a bright and colorful coconut filling. Cherry and lemon Jell-O make a nice filling.
COCONUT CANDY EASTER EGGS
4 cups shredded coconut
1 can (14 oz) sweetened, condensed milk
2 boxes gelatin mix (Jello) in your favorite flavor
1 1/2 teaspoon sugar
2 teaspoon vanilla
1/2 cup chopped walnuts (optional)
1 bag milk chocolate chips or white chocolate chips
Mix all ingredients, except chocolate chips, in a mixing bowl until the coconut has absorbed the gelatin mix. Kepp mixing until the Jell-O is well incorportated and not grainy. Let chill for 10 minutes.
Shape the mixture into egg shapes with your hands. Chill for a few hours (overnight is best) on waxed paper.
Dip each egg into melted milk chocolate and place on waxed paper. allow to set. Makes about 12 - 15 eggs about 1-2 inches long.
