Ingredients:
1 medium head green or red cabbage
2-3 tbsp (30-45ml) olive oil
Salt and freshly ground black pepper to taste
Optional Spices: Garlic powder, onion powder, smoked paprika (about 1/2 tsp each)
For the Lemon Tahini Sauce:
1/4 cup (60g) tahini
1/4 cup (60ml) water (plus more as needed)
2 tbsp (30ml) fresh lemon juice
1 clove garlic, minced
Salt to taste
Optional Garnish: Fresh parsley or cilantro, toasted sesame seeds
Directions:
1. Preheat Oven: Preheat oven to 400Β°F (200Β°C). Line a large baking sheet with parchment paper.
2. Prepare Cabbage: Remove any tough outer leaves from the cabbage. Place the cabbage core-down on a cutting board. Carefully slice the cabbage into thick "steaks," about 3/4 to 1 inch (2-2.5 cm) thick. You should get 3-4 steaks from a medium head; the outer rounded pieces might fall apart slightly but can still be roasted.
3. Season Cabbage: Arrange the cabbage steaks in a single layer on the prepared baking sheet. Brush both sides of each steak generously with olive oil. Season both sides liberally with salt, pepper, and any optional spices like garlic powder, onion powder, or smoked paprika.
4. Roast: Place the baking sheet in the preheated oven. Roast for 20 minutes. Carefully flip the cabbage steaks and roast for another 15-25 minutes, or until the edges are crispy and caramelized, and the center is tender when pierced with a fork. Roasting time will vary depending on thickness.
5. Make Tahini Sauce: While the cabbage is roasting, prepare the sauce. In a small bowl, whisk together the tahini, water, lemon juice, minced garlic, and salt until smooth and creamy. Add more water, 1 teaspoon at a time, if needed to reach a drizzling consistency.
6. Serve: Remove the roasted cabbage steaks from the oven. Transfer them to plates. Drizzle generously with the lemon tahini sauce. Garnish with fresh herbs or toasted sesame seeds, if desired. Serve immediately.
