Succulent Filet Mignon with Rich Portobello Mushroom Sauce 🍄🥩
Ingredients:
2 filet mignon steaks (6 oz each)
Salt and pepper to taste
2 tbsp olive oil
2 tbsp butter
1 shallot, finely chopped
2 garlic cloves, minced
1 cup sliced portobello mushrooms
1/2 cup beef broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 tsp fresh thyme, chopped
1 tbsp fresh parsley, chopped
Instructions:
Season steaks with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Cook steaks to desired doneness. Remove and keep warm.
In the same skillet, melt butter. Add shallots and garlic; sauté until soft.
Add portobello mushrooms and cook until tender.
Stir in beef broth and bring to a simmer. Add heavy cream and Parmesan cheese; cook until sauce thickens.
Return steaks to the skillet and coat with the mushroom sauce. Garnish with thyme and parsley before serving.
Notes:
For a non-dairy option, use coconut cream and nutritional yeast instead of heavy cream and Parmesan.
Serve with a side of roasted potatoes or steamed asparagus.
