Lemon Garlic Butter Chicken Bites with Spinach Alfredo Bowtie Pasta

Ingredients:

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
1 tbsp olive oil
4 cloves garlic, minced
1/4 cup lemon juice
2 tbsp butter
1/4 cup grated Parmesan cheese
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 (16 oz) package bowtie pasta
1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil
Zest of 1 lemon

Directions:

1. Cook pasta according to package directions. Drain and set aside.
2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
3. Add minced garlic to the skillet and cook for 1 minute, until fragrant.
4. Stir in lemon juice, butter, 1/4 cup Parmesan cheese, Italian seasoning, salt, and pepper. Cook for 1 minute, until sauce slightly thickens.
5. In a separate saucepan, combine heavy cream, 1/2 cup Parmesan cheese, and spinach. Heat over medium heat, stirring occasionally, until heated through and sauce is slightly thickened.
6. Add cooked pasta to the spinach Alfredo sauce and toss to coat.
7. Add the lemon garlic butter chicken to the pasta mixture and stir to combine.
8. Garnish with fresh basil and lemon zest before serving.
