For the grilled chicken:
2 chicken breasts, grilled & sliced
1 tbsp olive oil ๐ซ
1 tsp paprika
ยฝ tsp garlic powder
Salt & pepper to taste
For the roasted potatoes:
3โ4 small potatoes, quartered ๐ฅ
1 tbsp olive oil
ยฝ tsp smoked paprika
Salt & pepper
Fresh veggies & sides:
1 cucumber, sliced & diced ๐ฅ
10โ12 cherry tomatoes, halved ๐
1 ripe avocado, mashed with a pinch of salt ๐ฅ
๐จโ๐ณ Instructions:
Preheat oven to 200ยฐC (400ยฐF). Toss potato wedges with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25โ30 minutes until golden and crispy. Meanwhile, rub the chicken with olive oil and spices, then grill or pan-sear for 5โ6 minutes per side until fully cooked. In the meantime, prep fresh veggies and mash the avocado with a little salt. Assemble everything on a large plate: sliced chicken, crispy potatoes, cucumber, tomatoes, and a generous scoop of guac. Enjoy fresh and colorful!
