Hot Honey Halloumi and Avocado Tacos

These Hot Honey Halloumi Tacos are the perfect balance of sweet, spicy, and savory. 250 g halloumi
8 mini tortillas
2 avocados
60 g arugula (rocket)
50 g pomegranate seeds
1 heaped teaspoon harissa
2 tbsp honey
1 tsp red pepper flakes
1/4 cup Greek yogurt (60 ml)
10 g mint, chopped

Directions:
1. Slice the avocados in half, remove the pit, and mash with a fork on a plate.
2. Mix Greek yogurt and chopped mint to make mint yogurt. If too thick, add cold water to loosen.
3. Slice halloumi into thick strips, ensuring they are not too thin to prevent breaking.
4. In a bowl, mix harissa, honey, and red pepper flakes. Coat the halloumi slices with this mixture.
5. Heat a frying pan over medium-high heat. Fry halloumi for 3-4 minutes on each side until caramelized.
6. Warm the tortillas in a dry pan or microwave.
7. Assemble the tacos: mash ΒΌ avocado onto each tortilla, add arugula, top with 2-3 halloumi slices, drizzle with mint yogurt, and finish with pomegranate seeds.
