Apple Cider Donut Bread
Ingredients:
Loaf:
- 2 cups (250 g) all-purpose flour
- 1 ½ cups (300 g) granulated sugar
- 2 teaspoons baking powder
- 2 teaspoons apple pie spice
- ½ teaspoon kosher salt
- 1 ¼ cups apple cider, or apple juice
- 1 large egg, room temperature
- 2 tablespoons unsalted butter, melted
- 1 tablespoon vanilla extract
Topping:
- ¼ cup apple cider
- ½ cup (100 g) granulated sugar
- 2 teaspoons apple pie spice
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
2. In a large bowl, whisk together flour, sugar, baking powder, apple pie spice, and salt.
3. In a separate bowl, combine apple cider, egg, melted butter, and vanilla extract. Mix well.
4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
5. Pour the batter into the prepared loaf pan and smooth the top.
6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
7. While the bread is baking, prepare the topping by mixing apple cider, granulated sugar, and apple pie spice in a small bowl.
8. When the bread comes out of the oven, immediately brush the topping mixture over the warm loaf.
9. Allow the bread to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
