🦆 Rillettes de Canard (Duck Rillettes) 🍞
Slow-cooked duck meat shredded and preserved in its own fat, spreadable on crusty bread.
Ingredients:
• 500 g duck legs
• 100 g duck fat
• 2 garlic cloves
• 1 sprig thyme
• Salt & pepper
Instructions:
1️⃣ Season duck legs with salt, pepper, and thyme.
2️⃣ Place in a pot with garlic and duck fat.
3️⃣ Cover and cook slowly over low heat (or in oven at 150°C/300°F) for 2–3 hours until meat is tender.
4️⃣ Shred meat with forks, mix into the fat until creamy.
5️⃣ Pack into jars, cover with a thin layer of fat.
6️⃣ Chill before serving on toasted bread.
