Pineapple Christmas Balls
Ingredients:
- 1 1/2 cups crushed pineapple, well-drained
- 2 cups finely crushed graham cracker crumbs
- 1 cup sweetened shredded coconut (plus extra for rolling)
- 1/2 cup powdered sugar
- 1/2 teaspoon almond extract (optional, for extra flavor)
Directions:
1. In a large mixing bowl, combine the crushed pineapple, graham cracker crumbs, shredded coconut, powdered sugar, and almond extract if using.
2. Mix thoroughly until all ingredients are evenly incorporated and the mixture holds together when pressed.
3. Using your hands, form the mixture into small bite-sized balls.
4. Roll each ball in the extra shredded coconut to coat them evenly.
5. Place the coconut-coated balls on a parchment-lined tray and refrigerate for at least 1 hour to firm up before serving.

Tips:
