Honey Butter Cornbread Recipe
Ingredients
For the Cornbread:
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon baking soda
½ cup unsalted butter, melted
½ cup honey
½ cup granulated sugar (optional, for extra sweetness)
2 large eggs
1 cup buttermilk
For the Honey Butter Topping:
¼ cup unsalted butter, softened
3 tablespoons honey
Pinch of salt
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9-inch square baking dish or cast-iron skillet.
2. Mix dry ingredients: In a large bowl, whisk together cornmeal, flour, baking powder, salt, and baking soda.
3. Mix wet ingredients: In another bowl, whisk melted butter, honey, sugar (if using), eggs, and buttermilk until smooth.
4. Combine: Pour wet mixture into dry ingredients. Stir gently until just combined (don’t overmix).
5. Bake: Pour batter into prepared pan. Bake 25–30 minutes, until golden on top and a toothpick comes out clean.
6. Make honey butter: While cornbread bakes, beat together softened butter, honey, and a pinch of salt until creamy.
7. Serve: Spread honey butter over warm cornbread, or serve on the side.
Tip: For extra flavor, drizzle a little honey on top right before serving!
