Don't say no so quckly to fruitcake! It seems either folks love it or hate it, no in between! But you can bring a whole new taste and reputation to this holiday tradition by simply using your tasty imagination.
#fruitcakeseason Remember, you can use any combination of dried fruits that you like, it doesn't have to be the traditional red and green candied fruits. Apricots, cherries, dates, cranberries.. Same for the nuts. Use what you like, cashews, pistachios, walnuts...
How about a tropical twist with dried mango, papaya, macadamia nuts, and shredded coconut, throw in some white chocolate or dark/milk chocolate chips. Use fresh, whole spices for the most robust flavor. You don't have to make your Grandma's fruitcake, well unless its delicious. When looking for a base recipe how will I know if makes a light or dark fruitcake?
Sweeteners are your first clue. Light fruitcakes use lighter sugars, such as granulated or confectioners' sugar, to create a pale batter.
Second, is Spices., they are often used more sparingly, or the recipe may not call for any, allowing the fruit's flavor to be more prominent. Lastly, spirits. Most light fruitcakes use alcohol like sherry or flavored liqueurs.
Dark brown sugar, molasses, or golden syrup are primary indicators of a dark fruitcake, as they create a deep, rich color and flavor. Recipes for dark fruitcakes often feature dark-colored dried fruits, such as currants, prunes, and dark raisins. An abundance of warm spices like allspice, cinnamon, cloves, and nutmeg is common in darker recipes, giving the cake a more robust taste. "feeding" the finished cake with a dark liquor such as brandy, whiskey, or dark rum will produce a darker color and a more complex flavor profile.
