Strawberry Glazed Strawberry Cake
Ingredients:
For the Cake:
- 1 box strawberry cake mix
- 1 box (3 oz) strawberry gelatin
- 4 large eggs
- 1 cup vegetable oil
- ½ cup milk
- ½ cup mashed strawberries (fresh or frozen, thawed)
- 1 tsp vanilla extract
For the Strawberry Glaze:
- 1 cup powdered sugar
- 2–3 tbsp strawberry puree
- ½ tsp vanilla extract
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
2. In a large mixing bowl, combine the strawberry cake mix and strawberry gelatin.
3. Add eggs, vegetable oil, milk, mashed strawberries, and vanilla extract to the dry ingredients.
4. Beat on medium speed for 2 minutes until well combined.
5. Pour the batter into the prepared baking pan and spread evenly.
6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
7. Let the cake cool completely in the pan on a wire rack.
8. To make the glaze, whisk together powdered sugar, strawberry puree, and vanilla extract until smooth.
9. Drizzle the glaze evenly over the cooled cake. Allow it to set before serving.
