🥔 Truffade (Potato & Cheese Skillet) 🧀
Cheesy potato dish from Auvergne, cooked in duck fat.
Ingredients
600 g potatoes
200 g tome fraîche cheese (or Cantal)
1 tbsp duck fat
Salt & pepper
Instructions
1️⃣ Peel & slice potatoes thinly.
2️⃣ Cook slices in duck fat until golden and tender.
3️⃣ Add cheese slices, mix until melted and stringy.
4️⃣ Press mixture into the pan to form a cake.
5️⃣ Serve hot with salad or charcuterie.
