Ingredients
For the Salmon and Asparagus
4 salmon fillets (6 oz each) 🐟
1 lb fresh asparagus, trimmed 🥦
4 tbsp unsalted butter, melted 🧈
3 cloves garlic, minced 🧄
2 tbsp lemon juice 🍋
1 tsp lemon zest 🍋
1 tsp dried Italian seasoning 🌿
Salt and black pepper, to taste 🧂
1 tbsp fresh parsley, chopped (optional for garnish) 🌱
Instructions
Preheat the oven: Preheat your oven to 400°F (200°C).
Prepare the foil packets: Tear 4 large sheets of aluminum foil and place one salmon fillet in the center of each sheet. Arrange asparagus spears alongside the salmon on each piece of foil.
Make the garlic butter sauce: In a small bowl, whisk together melted butter, minced garlic, lemon juice, lemon zest, Italian seasoning, salt, and pepper.
Coat the salmon and asparagus: Drizzle the garlic butter mixture evenly over the salmon and asparagus in each foil packet.
Seal the packets: Fold the edges of the foil up and over the salmon and asparagus, sealing them tightly to create a packet.
Bake: Place the foil packets on a baking sheet and bake in the preheated oven for 15–20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve: Carefully open the foil packets, sprinkle with fresh parsley if desired, and serve immediately with lemon wedges for extra zest.
