Servings: 4
Prep Time: 15 minutes
Cook Time: 8-10 minutes
Total Time: 25 minutes
Ingredients
1 pound squid (calamari), cleaned and sliced into rings or left whole if small
2 tablespoons olive oil
3 tablespoons unsalted butter, melted
2 tablespoons lemon juice
1 tablespoon lemon zest
3 cloves garlic, minced
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
1/2 teaspoon smoked paprika
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Lemon wedges, for serving
Instructions
Prepare the Marinade:
In a bowl, mix together the olive oil, melted butter, lemon juice, lemon zest, minced garlic, thyme, smoked paprika, salt, and pepper until well combined.
Marinate the Squid:
2. Add the squid to the bowl with the marinade, tossing to coat evenly. Let the squid marinate for 10-15 minutes.
Preheat the Grill:
3. Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
Grill the Squid:
4. Thread the squid onto skewers if using rings or place them directly on the grill if left whole.
5. Grill the squid for 2-3 minutes per side, or until they are opaque and slightly charred. Be careful not to overcook, as squid can become tough and rubbery if grilled too long.
Serve:
6. Remove the squid from the grill and transfer to a serving platter.
7. Garnish with fresh parsley and serve with lemon wedges on the side.
Tips:
For added flavor, you can sprinkle a bit of extra smoked paprika or a squeeze of lemon juice over the squid just before serving.
If you prefer, you can cook the squid under a broiler or in a hot skillet if grilling isnβt an option.
