2 cloves garlic, smashed
2 sprigs fresh thyme or rosemary (optional)
For the Creamy Parmesan Mustard Sauce:
1 cup heavy cream
1/2 cup Parmesan cheese, freshly grated
2 tablespoons Dijon mustard
1 tablespoon whole grain mustard (optional)
1 tablespoon butter
2 cloves garlic, minced
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Filet Mignon:

Pat the steaks dry with paper towels and season generously with salt and black pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Once hot, add the filet mignon steaks and sear for 3-4 minutes per side for medium-rare, or longer for your desired doneness.
