Classic Pineapple Coconut "God Bless America" Cake

A patriotic tropical cake bursting with pineapple and coconut flavors, baked into a moist, tender crumb and decorated with red and blue accents for an all‑American celebration.

Ingredients:

2 cups all‑purpose flour
1½ cups granulated sugar
½ cup unsalted butter, softened
3 large eggs
1 cup pineapple juice
1 cup crushed pineapple (drained)
½ cup coconut milk
1 tsp vanilla extract
1½ tsp baking powder
½ tsp salt
1 cup shredded coconut
Optional: red and blue sprinkles for decoration
Instructions:

Preheat your oven to 350°F (175°C) and grease a bundt or 9×13‑inch pan.
In a bowl, whisk together flour, baking powder, and salt.
In a separate bowl, cream butter and sugar until light; beat in eggs one at a time, then stir in vanilla.
Mix pineapple juice, coconut milk, and crushed pineapple; gradually add the wet ingredients to the dry ingredients. Fold in shredded coconut.
Pour batter into the prepared pan and bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool completely. Optionally, drizzle with a glaze made by whisking powdered sugar with a bit of pineapple juice, and decorate with red and blue sprinkles.
