Buttery Garlic Pork Chops with Smooth Mashed Potatoes
Ingredients:
For the Pork Chops:
4 bone-in pork chops, about 1-inch thick
Salt and pepper to taste
4 tablespoons butter
3 cloves garlic, minced
1 teaspoon thyme
1/2 cup chicken broth
For the Mashed Potatoes:
2 pounds potatoes, peeled and quartered
4 tablespoons butter
1/2 cup heavy cream
Salt and pepper to taste
Directions:
For the Pork Chops:
Season the pork chops with salt and pepper.
In a large skillet, melt the butter over medium heat. Add the pork chops and sear each side for about 3-4 minutes until golden brown.
Add the minced garlic and thyme around the pork chops. Cook for an additional minute until fragrant.
Pour the chicken broth into the skillet, cover, and let simmer for about 5 minutes, or until the pork chops are cooked through.
Remove the pork chops from the skillet, keeping them warm.
For the Mashed Potatoes:
Boil the potatoes in salted water until tender, about 20 minutes.
Drain the potatoes and return them to the pot. Add the butter and heavy cream, and mash until smooth. Season with salt and pepper to taste.
