Hot Honey Halloumi and Mint Tacos
These vegetarian Hot Honey Halloumi Tacos are an exciting fusion of sweet, spicy, and savory flavors. With crispy, caramelized halloumi coated in a hot honey marinade, they are paired perfectly with creamy avocado, fresh arugula, and a cooling mint yogurt drizzle. These tacos are a versatile dish, ideal for a quick weeknight meal or as a crowd-pleasing treat at your next gathering.
250 g Halloumi
8 Mini tortillas
2 Avocados
60 g Arugula (rocket)
50 g Pomegranate seeds
1 Heaped teaspoon harissa
2 tablespoon Honey
1 teaspoon Red pepper flakes
ΒΌ cup Greek yoghurt (60ml)
10 g Mint (chopped)
Directions:
1. Slice the avocados in half, remove the seed, and mash with a fork.
2. Mix Greek yoghurt with chopped mint to make the mint yogurt.
3. Slice the halloumi into thin strips.
4. In a bowl, combine harissa, honey, and red pepper flakes. Add the halloumi and coat it well in the sauce.
5. Heat a frying pan and cook the halloumi for 3-4 minutes on each side until caramelized.
6. Toast the tortillas lightly in a pan.
7. Assemble the tacos by spreading mashed avocado on each tortilla, adding arugula and halloumi, and drizzling with mint yogurt. Top with pomegranate seeds.
