Creamy Homemade Butterscotch Pie
Ingredients:
1 cup packed dark brown sugar
1/4 cup cornstarch
1/2 teaspoon salt
3 cups whole milk
4 large egg yolks
4 tablespoons unsalted butter
1 tablespoon pure vanilla extract
1 pre-baked 9-inch pie crust
Whipped cream (for topping)
Butterscotch chips or shavings (for garnish)
Directions:
In a medium saucepan, whisk together the brown sugar, cornstarch, and salt. Gradually whisk in the milk, breaking up any lumps as you go. Cook the mixture over medium heat, stirring constantly until it thickens and begins to bubble.
In a separate bowl, whisk the egg yolks until fluffy. Slowly add a few spoonfuls of the hot mixture to the yolks, whisking continuously to avoid scrambling. Pour the yolk mixture back into the saucepan and cook for 2 more minutes, stirring.
Remove the saucepan from heat and stir in the butter and vanilla extract until everything is smooth and combined.
Pour the butterscotch filling into the pre-baked pie crust. Cover the surface with plastic wrap to prevent skin formation and chill in the fridge for at least 4 hours until set.
Before serving, top with whipped cream and garnish with butterscotch chips or shavings. Slice, serve, and enjoy!
