🛒 Ingredients (US Measuring Cups):
For the Cake Roll:
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3 large eggs
1/2 cup granulated sugar
2 tablespoons light brown sugar
1 teaspoon vanilla extract
1 tablespoon instant espresso or coffee powder (optional but boosts flavor)
2 tablespoons milk
Powdered sugar (for dusting towel)
For the Cinnamon Filling:
1/3 cup brown sugar (packed)
2 teaspoons ground cinnamon
2 tablespoons unsalted butter, melted
For the Glaze:
3/4 cup powdered sugar
2–3 tablespoons milk
1/2 teaspoon vanilla extract

Stage 1 – Make the Cake
Preheat oven to 350°F (175°C). Line a 10x15” jelly roll pan with parchment paper and lightly grease it.
In a bowl, sift together flour, baking powder, and salt.
In a large bowl, beat eggs, granulated sugar, and brown sugar on high speed for 4–5 minutes until thick and pale.
Add vanilla, coffee powder, and milk; mix until combined.
Gently fold in dry ingredients until just incorporated.
Pour into prepared pan and spread evenly. Bake for 10–12 minutes until springy to the touch.
Stage 2 – Roll the Cake
7. While cake is baking, lay out a clean kitchen towel and dust it generously with powdered sugar.
8. Immediately after baking, flip cake onto the towel, remove parchment, and carefully roll it up (with the towel) from the short end.
9. Let cool completely while rolled (about 30–40 minutes).
Stage 3 – Prepare Filling & Fill the Roll
10. Mix brown sugar, cinnamon, and melted butter into a spreadable paste.
11. Carefully unroll cooled cake and spread filling evenly over it.
12. Re-roll the cake (without towel) and place seam-side down on a serving platter.
Stage 4 – Glaze & Serve
13. Whisk together glaze ingredients until smooth and drizzle over the cake roll.
14. Chill for 15 minutes to set glaze, slice, and enjoy!
