Grilled Steak Fajitas
Ingredients:
For the Steak & Veggies:
1 lb flank steak (or skirt steak)
1 red bell pepper (sliced)
1 yellow bell pepper (sliced)
1 red onion (sliced)
2 tbsp olive oil
2 tsp fajita seasoning (store-bought or homemade)
For the Fajita Toppings:
2 cups shredded cheese (cheddar or a mix of cheddar and Monterey Jack)
1/2 cup sour cream
1 cup guacamole (homemade or store-bought)
1 cup salsa (fresh or store-bought)
4 flour tortillas (or corn tortillas)
Lime wedges
Fresh cilantro (for garnish)
Shredded lettuce
Instructions:
Prepare the Steak:
Rub the flank steak with olive oil and fajita seasoning. Let it marinate for at least 20 minutes.
Preheat your grill or grill pan over medium-high heat.
Grill the steak for about 5-6 minutes per side for medium-rare, or adjust to your preferred doneness.
Let the steak rest for 5 minutes before slicing it thinly against the grain.
Cook the Veggies:
While the steak rests, heat a little more olive oil in a pan over medium heat.
Add the sliced bell peppers and onions, seasoning with a pinch of salt and pepper.
Cook until softened and slightly charred (about 7-8 minutes).
Assemble the Fajitas:
Warm the tortillas on the grill or in a dry skillet for 30 seconds per side.
Lay out the tortillas on a serving platter and add a portion of grilled steak, followed by the sautéed bell peppers and onions.
Top It Off:
Add a generous spoonful of guacamole, sour cream, and salsa to each fajita.
Sprinkle with shredded cheese, shredded lettuce, and a squeeze of fresh lime juice.
