Chili Lime Chicken with Grilled Veggie Pasta

Zesty Chili Lime Chicken over Fire-Grilled Veggie Penne

Ingredients:

2 boneless, skinless chicken breasts

2 tablespoons olive oil

Juice and zest of 2 limes

1 tablespoon chili powder

1 teaspoon paprika

1 teaspoon cumin

2 garlic cloves, minced

Salt and black pepper, to taste

1 red bell pepper, sliced

1 zucchini, sliced

1 red onion, sliced

2 cups cooked penne pasta (whole wheat or gluten-free, optional)

1/4 cup chopped fresh cilantro

Lime wedges for serving

Directions:

In a medium bowl, whisk together olive oil, lime juice and zest, chili powder, cumin, paprika, garlic, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes (up to overnight).

Preheat grill or grill pan over medium-high heat. Grill marinated chicken for 6–7 minutes per side, or until fully cooked and lightly charred. Remove and let rest.

Grill the bell pepper, zucchini, and red onion slices for 3–4 minutes per side until tender and slightly charred.

Slice the grilled chicken and toss with grilled veggies and cooked penne pasta in a large bowl.

Garnish with chopped cilantro and a squeeze of fresh lime juice before serving.
