Egg & Avocado Power Bowl 🥑🥚🌽
Ingredients:
2 boiled eggs, sliced
1/2 avocado, sliced
1/2 cup cherry tomatoes, halved
1/2 cup sweet corn kernels (cooked)
1/4 red onion, thinly sliced
1/4 cup white cheese cubes (like feta or mozzarella)
2–3 tbsp guacamole or mashed avocado
Fresh parsley or cilantro
Salt & black pepper to taste
Optional Base:
1 cup cooked quinoa, bulgur, or leafy greens
Instructions:
Boil the eggs: Boil for about 9–10 minutes for firm yolks. Cool and slice.
Prep the veggies: Slice avocado and onion, halve the cherry tomatoes, and warm the corn if needed.
Assemble: Start with your base (if using), then layer on eggs, avocado, tomatoes, corn, cheese, onions, and a scoop of guacamole.
Season & garnish: Sprinkle with salt, pepper, and fresh parsley.
