Ingredients:
4 cups chopped fresh rhubarb
1 cup granulated sugar
1 (3 oz) package strawberry Jell-O
1 box yellow cake mix
½ cup (1 stick) unsalted butter, melted
Instructions:
Preheat your oven to 350°F (175°C).
Grease a 9x13" baking dish and spread rhubarb evenly across the bottom.
Sprinkle sugar evenly over the rhubarb, then layer the Jell-O powder over the sugar.
Pour the dry yellow cake mix over everything — don’t stir!
Drizzle melted butter evenly across the top.
Bake for 40–45 minutes until the top is golden brown and bubbly.
