Grilled Shrimp over Avocado Spinach Penne
Creamy Avocado Spinach Penne with Chargrilled Shrimp
Ingredients:
12 oz penne pasta
1 lb large shrimp, peeled and deveined
1 ripe avocado
2 cups fresh spinach
2 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon lemon juice
1/4 cup grated parmesan (optional or use dairy-free alt.)
1/4 teaspoon chili flakes (optional)
Salt and black pepper to taste
Fresh basil or parsley for garnish
Directions:
Cook the penne pasta according to package instructions. Drain and set aside.
In a small bowl, mash the avocado and mix with lemon juice, salt, and pepper. Set aside.
In a large skillet over medium heat, add 1 tablespoon olive oil. Add garlic and sauté for 1 minute.
Add spinach and cook until wilted, about 2 minutes. Remove from heat.
In a separate skillet or grill pan, heat 1 tablespoon olive oil over medium-high heat.
Season shrimp with salt, pepper, and optional chili flakes. Grill for 2-3 minutes per side or until pink and cooked through.
Toss the cooked pasta with the avocado mixture, sautéed spinach, and parmesan if using.
Top with grilled shrimp and garnish with fresh basil or parsley.
