Ingredients:

1 pint fresh oysters (with their liquor)
4 tbsp unsalted butter
2 cups whole milk
1 cup heavy cream
1 small onion, finely chopped
1 celery stalk, finely chopped
1 garlic clove, minced
Salt and pepper, to taste
Pinch of cayenne pepper (optional)
Fresh parsley, chopped (for garnish)
Oyster crackers or crusty bread (for serving)
Directions:

In a medium saucepan, melt butter over medium heat. Add the chopped onion and celery, cooking until softened, about 5 minutes.
Stir in the garlic and cook for another 1 minute until fragrant.
Pour in the oyster liquor and bring to a gentle simmer.
Add the milk and heavy cream, stirring occasionally. Heat gently but do not boil.
Add the oysters and cook just until the edges curl, about 2–3 minutes.
Season with salt, pepper, and cayenne if using.
Serve hot, garnished with fresh parsley and paired with oyster crackers or crusty bread.
