Spicy Cajun Chicken Linguine Pasta in Creamy Garlic Parmesan
Ingredients:
For the Cajun Chicken:
4 boneless, skinless chicken breasts (about 6 oz each)
2 tbsp Cajun seasoning
1 tbsp olive oil
1 tbsp butter
1/2 cup chicken broth
1/4 cup heavy cream
1 tbsp chopped fresh parsley, for garnish
For the Creamy Parmesan Pasta Linguine:
1 lb linguine pasta
4 tbsp butter
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for serving
1/4 cup reserved pasta water
1/4 tsp salt
1/4 tsp black pepper
1/4 cup chopped fresh basil, for garnish
Directions:
Cook the Pasta: Start by boiling a large pot of salted water. Cook the linguine according to the package instructions until al dente. Before draining, reserve about 1/4 cup of the pasta water, then drain and set the pasta aside.
Season the Chicken: While the pasta cooks, pat the chicken breasts dry with paper towels. Generously season both sides with Cajun seasoning.
Sear the Chicken: In a large skillet, heat the olive oil and butter over medium-high heat. Add the seasoned chicken breasts and cook for 5–7 minutes per side, or until golden brown and fully cooked (internal temperature should reach 165°F). Transfer the chicken to a plate and let it rest.
Deglaze the Skillet: Reduce the heat to medium. Pour the chicken broth and heavy cream into the skillet. Scrape up any browned bits from the bottom—this adds flavor to the sauce. Simmer for 3–4 minutes until the sauce thickens slightly, then remove from heat.
Make the Parmesan Sauce: In a separate pot or clean skillet, melt the butter over medium heat. Add the garlic and sauté for about 1 minute until fragrant. Stir in the heavy cream, then bring to a gentle simmer. Reduce heat and mix in the Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.
Toss the Pasta: Add the cooked linguine to the Parmesan sauce, tossing to coat evenly. If the sauce is too thick, gradually stir in a bit of the reserved pasta water until the desired consistency is reached.
Serve: Slice the rested Cajun chicken and arrange over the creamy pasta. Garnish with chopped parsley, fresh basil, and a sprinkle of extra Parmesan if you like.
