ingredients:
1 cup (170g) cooked quinoa (any color)
1 can (15 oz / 425g) kidney beans or black beans, rinsed and drained
½ cup (60g) vital wheat gluten (adjust for texture if needed, essential for 'sausage' texture)
¼ cup (35g) nutritional yeast
2 tbsp soy sauce or tamari
1 tbsp olive oil
1 tbsp tomato paste
1 tsp smoked paprika
1 tsp fennel seeds, lightly crushed
½ tsp garlic powder
½ tsp onion powder
½ - 1 tsp red pepper flakes (adjust to desired spice level)
½ tsp dried sage
½ tsp black pepper
¼ tsp dried thyme
Vegetable broth or water, as needed (1-2 tbsp if mixture is too dry)

directions:
1. In a large bowl, mash the rinsed and drained beans well with a fork or potato masher until mostly smooth but some texture remains.
2. Add the cooked quinoa, vital wheat gluten, nutritional yeast, soy sauce (or tamari), olive oil, tomato paste, smoked paprika, crushed fennel seeds, garlic powder, onion powder, red pepper flakes, sage, black pepper, and thyme to the mashed beans.
3. Mix everything together thoroughly using your hands or a sturdy spoon until a firm, cohesive dough forms. Knead it briefly in the bowl for a minute or two to develop the gluten. If the mixture feels too dry and crumbly, add vegetable broth or water, one tablespoon at a time, until it just comes together.
4. Heat a large skillet over medium heat with a tablespoon of olive oil (optional, but helps with browning).
5. Crumble the "sausage" mixture into the skillet, breaking it apart with a spoon into small, sausage-like pieces.
6. Cook, stirring occasionally, for 8-12 minutes, until the crumbles are browned and slightly crispy on the edges. Ensure it's cooked through.
7. Use the spicy vegan sausage crumbles immediately in pasta sauces, on pizzas, in tacos, breakfast scrambles, or any dish where you'd use traditional sausage crumbles.
