Cajun Chicken and Sausage Pasta Skillet
Ingredients:
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
12 oz smoked sausage, sliced into rounds
2 teaspoons Cajun seasoning (plus more to taste)
1 teaspoon paprika
1/2 teaspoon onion powder
Salt and pepper, to taste
1 small onion, diced
1 red bell pepper, sliced
4 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
8 oz penne pasta
1/2 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Directions:
Heat olive oil in a large skillet over medium-high heat.
Season the chicken with Cajun seasoning, paprika, onion powder, salt, and pepper. Add to the skillet and sear until browned and cooked through. Remove and set aside.
Add sausage to the same skillet and cook until browned. Add the onions and bell pepper, sautéing until soft, about 5 minutes.
Stir in garlic and cook for 1 minute until fragrant.
Pour in chicken broth and heavy cream. Bring to a gentle simmer.
Stir in uncooked pasta. Reduce heat, cover, and simmer for 12–14 minutes, stirring occasionally, until the pasta is tender.
Return the chicken to the skillet and mix everything together.
Stir in Parmesan cheese until melted and the sauce is creamy.
Garnish with chopped parsley before serving.
