Baked Broccoli Cheese Balls

Ingredients:

2 cups broccoli florets, finely chopped

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

¾ cup breadcrumbs (plus extra for coating)

2 large eggs, lightly beaten

½ teaspoon garlic powder

¼ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

Olive oil spray

Instructions:

Preheat oven: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray it with olive oil.

Cook the broccoli: Steam the broccoli florets for 5–7 minutes until tender. Let them cool slightly, then finely chop.

Mix the ingredients: In a large bowl, combine the chopped broccoli, cheddar, Parmesan, ¾ cup breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Stir until fully mixed.

Form the balls: With your hands, shape the mixture into small balls (about 1–2 inches). Roll each ball in extra breadcrumbs for added crispiness.

Bake: Arrange the balls on the prepared baking sheet with some space between each. Lightly spray the tops with olive oil. Bake for 20–25 minutes, turning halfway through, until golden brown and crispy.

Serve: Enjoy warm with your favorite dipping sauce like marinara, ranch, or garlic aioli.

Notes:

Use fresh broccoli for best texture, but frozen (well-drained) can work too.

Customize with different cheeses or seasonings to suit your taste.

These are great for meal prep—just reheat in the oven or air fryer.
