Homemade Lemon Drops
Ingredients:
1 cup granulated sugar
1/2 cup light corn syrup
1/4 cup water
1 tablespoon fresh lemon juice
1/2 teaspoon lemon zest
Yellow food coloring (optional)
Powdered sugar, for dusting
Directions:
Line a baking sheet with parchment paper and lightly dust it with powdered sugar.
In a heavy-bottomed saucepan, combine granulated sugar, corn syrup, and water. Heat over medium heat, stirring until the sugar dissolves.
Attach a candy thermometer and bring the mixture to a boil without stirring until it reaches 300°F (hard crack stage).
Remove from heat and stir in lemon juice, zest, and food coloring if using. Be careful as the mixture will bubble.
Quickly spoon or pipe small circles onto the prepared baking sheet or pour into silicone candy molds. Let them cool completely.
Once hardened, toss the lemon drops in powdered sugar to prevent sticking. Store in an airtight jar.
