Instructions
Prepare the Crust: In a mixing bowl, combine the crushed Fruity Pebbles, granulated sugar, and melted butter. Mix until the cereal is evenly coated and the texture resembles wet sand. Press the mixture firmly into the bottom of an 8x8-inch square pan lined with parchment paper. Place the pan in the refrigerator to set while you prepare the filling.
Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
