Skillet Creamy Spicy Cajun Chicken & Sausage Pasta
Ingredients:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1 lb smoked sausage, sliced
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 (14.5 oz) can diced tomatoes, undrained
4 cups chicken broth
1 lb pasta (penne, rotini, or your choice)
1 cup heavy cream
1 cup grated Parmesan cheese
2 tbsp Cajun seasoning
1 tbsp olive oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Heat olive oil in a large skillet over medium-high heat. Add chicken and sausage and cook until browned. Remove from skillet and set aside.
Add onion and bell peppers to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in diced tomatoes, chicken broth, pasta, and Cajun seasoning. Bring to a boil, then reduce heat to low, cover, and simmer until pasta is cooked, about 15-20 minutes.
Stir in heavy cream and Parmesan cheese. Add chicken and sausage back to the skillet and heat through.
Season with salt and pepper to taste. Garnish with fresh parsley before serving.
