Strawberry Dandelion Jam
Ingredients:
2 cups fresh strawberries, hulled and chopped
1 cup fresh dandelion petals (yellow parts only, pesticide-free)
2 tablespoons lemon juice
1 cup granulated sugar (adjust to taste)
1 tablespoon fruit pectin (or as directed on package)
Directions:
Rinse and prepare the dandelion petals by removing green parts and sepals—use only the yellow petals.
In a medium saucepan, combine strawberries, lemon juice, and sugar. Bring to a simmer over medium heat, stirring often.
Add the dandelion petals and continue to simmer for 10–15 minutes, letting the flavors infuse and the mixture thicken slightly.
Stir in fruit pectin and bring to a boil for 1–2 more minutes.
Remove from heat and let cool slightly.
Pour into sterilized jars and refrigerate. For longer storage, process in a water bath for 10 minutes.
