🇫🇷 Tarte Flamiche (Leek Tart)
Creamy and savory leek tart in a flaky pastry crust—classic comfort from Northern France.
Ingredients:
• 1 sheet puff pastry
• 3–4 large leeks, trimmed and sliced into rounds
• 2 tbsp butter
• 150 ml crème fraîche or heavy cream
• 2 eggs
• Salt and pepper
• Nutmeg (optional)
Instructions:
1. Preheat oven to 180°C (350°F).
2. Sauté leeks in butter until soft but not browned.
3. Line tart pan with puff pastry, prick base with fork.
4. Mix eggs, cream, salt, pepper, and a pinch of nutmeg.
5. Spread leeks into pastry and pour cream mixture over.
6. Bake for 35–40 minutes until golden and set.
