Ingredients:
- 1 pound Yukon Gold potatoes, cut into 1-inch cubes
- 3 garlic cloves, minced
- 1 pound sirloin steak, cut into 1-inch cubes
- 1 teaspoon dried oregano
- 4 tablespoons ghee or butter, divided
- 1 tablespoon olive oil
- 1 teaspoon sea salt, plus more to taste
- 1 teaspoon dried thyme
- 1 teaspoon ground black pepper, plus more to taste

Instructions:

1. Cook the Potatoes:
- Start by heating a large cast-iron skillet over medium heat. Pour in the olive oil and add 2 tablespoons of ghee.
- Once the ghee has melted, toss in the potato cubes. Immediately sprinkle the minced garlic, dried thyme, oregano, salt, and pepper over the potatoes.
- Allow the potatoes to cook for approximately 8-10 minutes without stirring. Then, give them a careful stir and continue to cook for an additional 8-10 minutes, stirring frequently until they turn golden and tender. Once cooked, remove them from the skillet and set aside.

2. Sear the Steak:
- Increase the heat to medium-high and add the remaining 2 tablespoons of ghee to the same skillet.
- Once the ghee is hot, add the steak cubes, seasoning them with a little salt and pepper. Allow the steak to sear without stirring for about 2 minutes to develop a nice crust.
- After 2 minutes, stir the steak and cook for another 3-5 minutes until they are cooked to your preferred doneness and have a beautiful golden color.

3. Combine and Serve:
- Bring cooked potatoes back into the skillet with the steak, gently stirring to combine all the flavors.
- Test and adjust the seasoning with more salt and pepper if needed.
- Garnish with freshly chopped parsley for a pop of color and taste. Serve hot and enjoy!
