🛒 Ingredients:
🍗 4 bone-in, skin-on chicken thighs
🧂 Salt & pepper to taste
🫒 3 tbsp olive oil
🧄 3 garlic cloves, minced
🥔 700g (about 1 ½ lbs) potatoes, diced into cubes
🌿 1 tsp dried thyme (or fresh sprigs)
🌿 1 tsp dried rosemary
🌿 1 tsp dried oregano
🥗 250g (½ lb) fresh green beans, trimmed
🍋 ½ lemon (juice + zest, optional, for brightness)
👨🍳 Instructions:
Preheat Oven: Heat oven to 200°C (400°F).
Season Chicken: Pat chicken dry, then rub with 1 tbsp olive oil, salt, pepper, and half of the garlic.
Prepare Potatoes: Toss diced potatoes with 2 tbsp olive oil, thyme, rosemary, oregano, salt, and remaining garlic. Spread evenly in a baking dish.
Roast Chicken & Potatoes: Nestle chicken thighs skin-side up on top of the potatoes. Roast uncovered for 35–40 minutes until chicken skin is crispy and potatoes are golden.
Add Green Beans: After 35 minutes, scatter green beans around the pan. Roast for another 10–12 minutes until beans are tender-crisp and chicken reaches 74°C (165°F).
Finish & Serve: Squeeze lemon juice over everything, garnish with extra herbs if desired, and serve straight from the pan.

Swap green beans for asparagus, Brussels sprouts, or carrots.
Use boneless thighs for a quicker cook (25–30 minutes total).
Add smoked paprika or chili flakes for a bolder flavor.
