Spanish Bar Cake was a very simple bar shaped raisin spice cake with an unfussy vanilla frosting. We loved it at my house! ❤ The cake was made by Jane Parker Bakery and sold through the A&P supermarket chain in the US & Canada.
SPANISH BAR CAKE
1 1/4 CUPS + 2 TEASPOONS WATER
5 TBSP. SHORTENING OR BUTTER
2 CUPS RAISINS
1 CUP DARK BROWN SUGAR
2 TSP. CINNAMON
1/2 TSP. NUTMEG
1/2 TSP. GROUND CLOVES
1 TSP. SALT
1 TSP. BAKING SODA
2 CUPS ALL-PURPOSE FLOUR
1 TSP. BAKING POWDER
VANILLA FROSTING
PREHEAT OVEN TO 325 DEGREES F.
PLACE THE 1 /1/ CUPS WATER, SHORTENING, RAISINS, BROWN SUGAR, CINNAMON, NUTMEG, AND CLOVES INTO TA SAUCEPAN. BRING TO A BOIL, COOKING FOR 3 MINUTES. LET COOL. DISSOLVE SALT AND BAKING SODA IN THE 2 TSP. WATER, BLEND INTO RAISIN MIXTURE. WHISK TOGETHER FLOUR AND BAKING PWDER, ADD TO RAISIN MIXTURE. POUR BATTER INT GREASED 9"X5" LOAF PAN. BAKE FOR 40- 50 MINUTES UNTIL TOOTHPICK INSERTED INTO CAKE COMES OUT CLEAN. COOL. SLICE CAKE IN HALF LENGTHWISE AND FROST WITH VANILLA FROSTING.
VANILLA FROSTING
1 CUP WHITE SHORTENING
1CUP BUTTER, SOFTENED
8 CUPS POWDERED SUGAR
2 TSP. VANILLA
4-6 TBSP. MILK
MIX ALL INGREDIENTS UNTIL SMOOTH AND FLUFFY
