5 Layer Cookie Box Brownie Cheesecake
Ingredients:
- 16 oz chocolate chip cookie dough, room temperature
- 36 oz brownie mix (2 boxes), batter prepared according to package instructions
- 24 oz cream cheese, softened
- ½ cup sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 40 double-stuffed chocolate cookie sandwiches
Directions:
1. Preheat oven to 350°F (175°C).
2. Press the chocolate chip cookie dough evenly into the bottom of a greased 9x13-inch baking pan to form the first layer.
3. Spread half of the prepared brownie batter evenly over the cookie dough layer.
4. In a mixing bowl, beat the softened cream cheese, sugar, vanilla extract, and egg until smooth and creamy.
5. Pour and spread the cream cheese mixture over the brownie layer evenly.
6. Place the double-stuffed chocolate cookie sandwiches in a single layer over the cream cheese layer.
7. Spread the remaining brownie batter evenly over the cookie sandwich layer.
8. Bake for 45-50 minutes or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are fine).
9. Allow the dessert to cool completely in the pan on a wire rack before refrigerating for at least 3 hours to set.
10. Slice into bars and serve chilled.
