π No-Bake Lemon Dazzling Blueberry Cream Cake

For the crust:
β’ 200g (about 20) graham crackers or digestive biscuits, crushed
β’ 100g (7 tbsp) unsalted butter, melted
β’ 2 tbsp sugar (optional, if you like it sweeter)
β’ Zest of 1 lemon (for a fresh citrus twist)
For the lemon cream filling:
β’ 300ml (1 ΒΌ cups) heavy cream, cold
β’ 300g (1 β
cups) cream cheese, softened
β’ 120g (Β½ cup) lemon curd (store-bought or homemade)
β’ 100g (Β½ cup) powdered sugar
β’ Juice of Β½ lemon
β’ 1 tsp vanilla extract
For the blueberry topping:
β’ 250g (2 cups) fresh or frozen blueberries
β’ 2 tbsp sugar
β’ 1 tbsp lemon juice
β’ 1 tsp cornstarch + 1 tbsp cold water (slurry, for thickening)
Optional garnish:
β’ Lemon zest
β’ Whipped cream
β’ Fresh blueberries
β’ Mint leaves
π₯ Instructions
1. Make the crust:
1 In a bowl, combine crushed graham crackers, melted butter, sugar, and lemon zest.
2 Press mixture firmly into the base of a 9-inch (23 cm) springform pan.
3 Chill in the fridge for 20β30 minutes to firm up.
2. Make the lemon cream filling:
1 In a large bowl, beat the cream cheese until smooth.
2 Add lemon curd, powdered sugar, lemon juice, and vanilla extract. Mix until creamy.
3 In a separate bowl, whip the heavy cream until stiff peaks form.
4 Fold the whipped cream into the lemon-cream cheese mixture gently, until well combined.
5 Pour the filling over the chilled crust and smooth the top.
6 Chill in the fridge for at least 4β6 hours (or overnight) until set.
3. Prepare the blueberry topping:
1 In a small saucepan, combine blueberries, sugar, and lemon juice.
2 Simmer over medium heat until berries start to break down.
3 Stir in the cornstarch slurry and cook until thickened (1β2 minutes).
4 Let cool completely before spooning over the set lemon cream layer.
4. Decorate and serve:
Top with fresh lemon zest, a few whole blueberries, whipped cream swirls, and mint leaves for a dazzling finish. Serve chilled!
