One Pot Garlic Parmesan Pasta
Ingredients:
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 cup milk (plus more as needed)
- 8 ounces uncooked fettuccine
- Kosher salt and freshly ground black pepper, to taste
- ¼ cup freshly grated Parmesan
- 2 tablespoons chopped fresh parsley leaves
Directions:
1. In a large pot or deep skillet, melt the butter over medium heat.
2. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn.
3. Pour in the chicken broth and milk, then add the uncooked fettuccine. Make sure the pasta is submerged.
4. Bring the mixture to a boil, then reduce heat to a simmer. Cook, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed, about 12-15 minutes. Add more milk as needed to achieve a creamy consistency.
5. Season with kosher salt and freshly ground black pepper to taste.
6. Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
7. Garnish with chopped fresh parsley leaves before serving.
