๐ Apple Fritter Bites ๐
Ingredients:
For the Bites:
Nonstick baking spray
1 ยฝ cups all-purpose flour
2 teaspoons baking powder
ยฝ teaspoon salt
2 teaspoons ground cinnamon
ยผ cup unsalted butter, melted and slightly cooled
ยผ cup granulated sugar
1 large egg
ยฝ teaspoon vanilla extract
ยฝ cup unsweetened applesauce
1 ยฝ cups finely diced peeled apples (like Honeycrisp or Gala)
For the Glaze:
2 cups powdered sugar

cup + 2 tablespoons apple cider
Instructions:
Heat Oven & Prepare Pan: Preheat your oven to 350ยฐF (175ยฐC). Spray a 24-cup mini muffin pan with nonstick spray.
Mix Dry Ingredients: In a medium bowl, stir the flour, baking powder, salt, and cinnamon together with a fork or whisk.
Mix Wet Ingredients: In a larger bowl, mix the melted butter and sugar. Add the egg and vanilla, and whisk until smooth. Stir in the applesauce.
Combine: Pour the dry ingredients into the wet ingredients. Stir with a spoon until just combinedโitโs okay if a few flour streaks remain. Gently fold in the diced apples.
Bake: Spoon the batter into the muffin cups, filling each about ยพ full. Bake for 12-15 minutes, until the tops look dry and spring back when lightly touched.
Cool: Let the bites cool in the pan for 5 minutes, then move them to a wire rack.
Make Glaze: While the bites cool, put the powdered sugar in a bowl. Gradually whisk in the apple cider until you have a smooth, thin glaze.
Glaze: Once the bites are just warm, dip the top of each one into the glaze. Let the extra drip off, then place them back on the rack for the glaze to set.
